Jen Carter, Caribsea

Caribsea
We spoke with Jen Carter, General Manager of Caribsea in Emerald Isle, a coastal fine dining destination known for fresh, sustainable seafood, rooftop cocktails, and unforgettable celebrations.

At Caribsea, dining is more than a meal — it’s an experience. Guests enjoy upscale coastal cuisine with locally sourced seafood, prime cuts of beef, and southern flair. The rooftop bar offers stunning ocean and sound views, perfect for sunset cocktails, while the flexible event space hosts weddings, private celebrations, and corporate gatherings.

Tourism is essential to Caribsea’s success. About 75% of the restaurant’s revenue comes during the summer months, allowing them to stay open year-round and provide jobs to the local community. Visitors don’t just come for dinner — they enjoy the full evening, from cocktails and appetizers to dessert, making tourism the difference between a good season and a great one.

Out-of-town guests often call Caribsea the highlight of their trip. They love the views, the food, and the welcoming atmosphere — and many return year after year, making it a tradition. Jen and her team embrace the summer rush with over 50% more staff, creating a lively, fast-paced environment fueled by the mix of locals and vacationers.

From first-time guests to seasoned vacationers, every reservation at Caribsea helps fuel local jobs, support small business growth, and keep Emerald Isle’s dining scene thriving.
